One thing I can’t help but miss sometimes is a nice bowl of cereal! I love cereal! But since coming to the realized the these little boxes of goodness contain ungodly amounts of sugars, chemicals, fillers, additives, and often gluten it’s a love I had to quit. Until now! I cooked up a big batch over this Pumpkin Granola from PaleOMG after a friend of mine from the gym made it and gave me a sample! Not only was it great to pack up and take with me to my hotel this past weekend but with the help of some ice cold almond milk it truly hit that cereal spot that had been left void for many months now.
Pumpkin Granola
Ingredients:
- 1/2 cup sliced almonds
- 1/2 cup pumpkin seeds
- 1/2 cup pecans, chopped
- 8-10 dried dates, pitted & chopped
- 1/2 cup pumpkin puree
- 1/3 cup coconut oil, melts
- 1/3 cup unsweetened shredded coconut
- 1/3 cup maple syrup
- 1 tsp vanilla extract
- 2 tbsp cinnamon
- 1 tbsp nutmeg
- 1/8 tsp ground cloves
- 1/8 tsp ground ginger
- pinch of salt
Instructions:
- Preheat oven to 325° F.
- In a large mixing bowl combine all wet ingredients: add your pumpkin puree, coconut oil, maple syrup, vanilla extract and all spices. Mix well.
- Then add in your dry ingredients: nuts, seeds, dates and shredded coconut.
- Place parchment paper on a large baking sheet and pour granola mixture on top. Use a spoon to spread out the mixture evenly so everything will cook at the same time.
- Place in oven and cook for 30-40 minutes, moving the granola around halfway through to be sure it doesn’t burn.
- Let cool. Letting the granola cool will help it harden up!
- Eat all by itself or top off with coconut milk, almond milk or even dairy milk.
- Enjoy!
Note: I made two batches at the same time and I think it’s important to note that when you spread the mixture on the baking sheet to do so in a relatively thin layer as this also helps with in hardening later on as mine was kind of soft!
